Made by chef Declan O'Donoghue in October 2016, it's a family-run business located in Enniskillen, Co. Fermanagh.
Ingredients: water, dry-cured Irish bacon (23%)(pork, salt, sugar, preservatives (sodium nitrite, sodium nitrate, saltpetre), antioxidant (sodium ascorbate), natural beech and oak smoke), white sugar, onion, brown sugar, spirit vinegar, invert sugar syrup, salt, mustard, gelling agent (pectin), acidity regulator (citric acid), cayenne pepper
